I had mentioned last week that I brought home the Taste of Home Best Loved Recipes cookbook and my son went through it and started writing down recipes he wanted me to try. One recipe he asked me to do every single day until I caved was the Cherry Cheese Blintzes.
So, last week I bought the ingredients, but decided to make it a strawberry cheese blintze for three reasons. First, I didn’t have a cherry pitter. Second, cherries are stinking expensive right now and third, I like and can afford strawberries!
I got ready the first night (mmmhmmm the 1st night) and whipped everything up. I pulled out my pan, which was 10” not the 8” suggested. I sprayed the pan and yah, it stuck. I could NOT get that crepe to flip over, but scraped it off the bottom. Recipe was on hold until I was able to get to the store the next day.
I got my pan and voila, was ready to start flipping my crepes. I had never made them before and had no idea if they’d be easy or hard to make. Well, with a plan that they can pretty much slip from, they turned out fantastic!
Doodle even liked them. Buddy, not so much. He’s not a real “creamy” kind of eating guy. And mmmm this has cream in the center of the crepe!
I’m waiting to see if I can copy the recipe here since it will come directly from the Taste of Home cookbook. If I can, I’ll add the recipe tomorrow!
For now here are the ingredients:
1 1/2 Cups 2% milk
3 eggs
2 Tablespoons butter, melted
2/3 Cup all-purpose flour
1/2 teaspoon salt
Filling
1 Cup (8 ounces) 4% cottage cheese
1 package (3 ounces) cream cheese, softened
1/4 Cup sugar
1/2 teaspoon vanilla extract
Cherry Sauce
1 pound fresh or frozen pitted sweet cherries (I substituted 1 pound frozen strawberries
2/3 Cup plus 1 Tablespoon water, divided
1/4 Cup sugar
1 Tablespoon starch

Yum these look good. Total food porn for pregnant women! I am not a creamy food person either but I love the tips on making the crepes. I may try this next weekend to make a fun and fancy breakfast and let the family customize them to their liking.
